Sesbania javanica, commonly known as Sesbania Pea, Javan Sesbania, or Yellow Pea Bush, is a fast-growing, short-lived sub-tropical to tropical legume tree admired for its striking pendulous yellow flowers and soft, feathery foliage. Native to Southeast Asia and northern Australia, it is often grown as an ornamental, nitrogen-fixing support plant, or pioneer species in regenerative and permaculture systems.

This small tree or large shrub typically reaches 3-6 metres in height and has a light, open canopy. Its leaves are pinnate and delicate, giving it a soft, airy appearance. The standout feature is its clusters of vivid yellow, pea-like flowers, which hang downward in dramatic sprays and attract pollinators such as bees and birds.

Sesbania javanica produces an abundant display of large, visually striking yellow flowers which are not only ornamental but also highly versatile in the kitchen. The flowers are most commonly enjoyed cooked, where their flavour becomes mild and comparable to lightly cooked green beans.

They are particularly well-suited to light battering and frying, such as in a delicate beer batter, or can be incorporated into stir-fries and noodle dishes, where they add both texture and visual appeal. They can also be consumed raw—often finely chopped and combined with chilli and fresh herbs such as coriander in salads.

Another traditional preparation involves light curing with salt or sugar. The flowers are roughly chopped and left to rest for several hours, during which time they soften and release moisture, creating a tender, lightly preserved side dish. This preparation pairs particularly well with rich, spicy foods such as hot curries.

The flowers can also be pickled or brined, significantly extending their shelf life and allowing them to be stored for long periods while retaining their unique character.

In addition to the flowers, the young leaves and shoots are also edible and used in various cuisines. The sprouted seeds are another culinary highlight, especially when stir-fried with chilli, garlic, and a splash of fish sauce, resulting in a bold and flavourful dish.
