Description
Dipteryx odorata, commonly known as the Tonka Bean, is a tropical species renowned for its aromatic seeds, which are used in a variety of applications. The seeds, or tonka beans, have a distinctive aroma that resembles vanilla with hints of almond, cinnamon, and cloves. They are used in both culinary and perfumery contexts.
In some parts of the world, particularly in South America, grated tonka beans are used to flavour desserts, pastries, and beverages. They are prized for their complex aroma and flavour profile. Only a quarter of a grated bean is required in desserts.
The tonka bean is also a key ingredient in perfumery. Its rich, sweet scent adds depth and warmth to many fragrances.
The main compound responsible for the tonka bean’s fragrance is coumarin. Coumarin has a sweet, vanilla-like aroma, but it can be toxic in large quantities. Its use is regulated in some countries due to potential health risks.
In indigenous cultures of the Amazon Basin, tonka beans have been used not only as a flavouring but also in traditional medicine.
